Banana Chocolate Nice Cream
This is National Ice Cream Month, and you know me, of course, I have a healthy alternative for you to celebrate! This recipe will blow your mind because it just doesn't get simpler than that: Banana "Nice Cream".
The reason it's called "nice cream" is that it's a vegan alternative, and better for you. But I promise, it's just as delicious as any conventional ice cream, you will still love it even if have no intention of becoming vegan.
Ingredients:
- 2 frozen large bananas chopped in large slices (remove banana peels before freezing)
- 2–4 tablespoons unsweetened almond milk (any kind of nut milk will work)
- 2 tablespoons unsweetened organic chocolate powder
- 1 teaspoon mesquite powder
(No need to add sugar or sweeteners of any kind)
Instructions:
1. Place the frozen banana slices and the 2 tablespoons of unsweetened almond milk into a high-speed food processor or blender.
2. Blend on high for 1 to 2 minutes stopping to scrape the sides every so often.
3. If you have trouble blending the bananas, add more almond milk slowly, by the tablespoon.
4. Add the rest of the ingredients and blend until smooth.
Voilá, that's it, your banana nice cream is ready to serve!
You can also double batch and keep it in a container in the freezer.
Eat immediately!
